WINE: Cerasuolo D’Abruzzo DOC

GRAPES: MONTEPULCIANO D’Abruzzo of Ancient clones selected in the vineyards located in the municipality of Loreto Aprutino in the province of Pescara.

HARVEST: The harvest takes place in the first decade of October in relation to the complete maturation of the grapes assessed by measuring the sugar grade, total acidity and pH. The grapes are manually harvested in respect of their integrity and organoleptic characteristics.

VINIFICATION: The modern principles of traditional rosé wine are applied. The removal of the skins is macerating for about 12 hours at a T ° 8-10 ° C, to allow the extraction of the noble and aromatic components of the skins fundamental for the perfume and the personality of the future wine. The must-flower that Sgronda from the Marc is decked and fermented with the addition of selected yeasts at a controlled temperature of 15-16 ° C. After fermentation, the wine is immediately separated from the coarse lees and refined in a steel tank for about 3-4 months at low temperature to avoid losing the organoleptic characteristics of aroma and freshness typical of Cerasuolo. After this refinement phase, the wine is bottled and aged in the bottle for about a month before the consumption.

Organoleptic Characteristics:

COLOUR: Lively and bright rosé, typical of the cherry;

SMELL: Intense aroma, fresh and pleasantly fruity with clear hints of ripe cherries;

FLAVOUR: balanced, fresh, smooth and round taste of good body and persistence.

PAIRINGS: It is ideal to accompany appetizers made from salami, pasta dishes and dishes made from white meats and lean cheeses.

SERVICE: Serve a T ° of approx. 10-12 ° C by uncorking the bottle at the time of consumption.

STORAGE: Store in a cool place at 10-12 ° C holding the bottle lying down.
